Chocolate Oreo Cupcakes

Well hello there! I've finally decided to make my cupcake blog and I'm excited to share this first recipe. I have been getting recipes from Your Cup of Cake, and I decided it would probably taste cool to take her chocolate cake and mix it with her Oreo frosting, while still making it my own. So, without further adu, here are the Chocolate Oreo Cupcakes I came up with.



Chocolate Oreo Cupcakes

Ingredients
Chocolate Cake:
1 box Devil's Food Cake Mix
4 eggs
2/3 cup oil
1 small pkg. chocolate instant pudding
1 cup milk
1/2 cup sour cream
2 teaspoons vanilla extract
10 Oreos, chopped

Oreo Frosting:
10 Oreos (twist and scrape off cream filling)
1/2 softened butter
8oz cream cheese
2 tsp. vanilla
3-4 powdered sugar

Chocolate chips for decoration

Directions:

Cake
1. Preheat oven to 350 degrees and line pans with cupcake liners.
2. In a large bowl, gently whisk eggs, oil, milk, sour cream and vanilla extract together.
3. Sift cake mix into wet ingredients.
4. Add the pudding mix and stir until combined.
5. Fold in chopped Oreos
6. Fill cupcake liners 3/4 full and bake for 17-22 minutes or until an inserted knife comes out clean.

Frosting
1. Take the Oreos and crush them in a plastic bag using a rolling pin. If you have a food processor, that works the best. Sift your finely crushed Oreos to remove any lumps. Lumps will cause your piping bag to clog.
2. With your mixer, beat the butter and cream cheese. Add vanilla extract and slowly add powdered sugar until you reach your desired consistency.
3. Fold in crushed Oreos. Don't stir too much or the frosting will turn a gross gray color.
4. Pipe onto cooled cupcakes and top with chocolate chips. Enjoy!

The cookie pieces don't need to be too small for the cake, just bite sized!

The cookie chunks should mix right into the cake batter.
